Espresso Nice Cream Recipe

This luscious and nutritious frozen treat combines the rich flavors of espresso and cacao with the health benefits of chia seeds. It's a delightful dessert that not only satisfies your sweet cravings, but also provides a boost of energy and essential nutrients!

INGREDIENTS

2½ cups frozen bananas
2 Tbsp. cashew butter
2 Tbsp. coconut cream
3 Tbsp. plain yogurt
1 Tbsp. Navitas Organics Cacao Nibs
3 Tbsp. Navitas Organics Cacao Powder
3 Tbsp. Navitas Organics Chia Seeds
Pinch of salt
¼ cup honey
Double shot of espresso
1 cup Navitas Organics Semi-sweet Cacao Wafers
1 Tbsp. coconut oil

DIRECTIONS

Melt the cacao wafers with the coconut oil by heating in a double boiler (or heat in microwave in 30 second increments). Set aside.
Combine espresso with chia seeds in a small bowl. Stir and then refrigerate for 20 minutes to form a chia pudding.
Add espresso chia pudding, cashew butter, coconut cream, yogurt, cacao powder, cacao nibs, salt, and honey to a food processor.
Use food processor's rotary grater attachment to blend in frozen bananas.
Scoop into a bowl, top with melted cacao wafers and cacao powder, and enjoy!

Note: For a firmer ice cream texture, freeze for 45 minutes (stirring after 20 minutes) or use a cold stone.
