Matcha Cacao Energy Bites

Made with organic Matcha Powder, crunchy Cacao Sweet Nibs and melty Semi-sweet Cacao Wafers, these bite-sized treats are the perfect balance of earthy, chocolatey and naturally energizing. Whether you need a mid-morning boost or an afternoon pick-me-up, these no-bake bites have you covered!

INGREDIENTS


1 cup rolled oats 
¼ cup sweetened shredded coconut  
¼ cup chopped peanuts (or chopped nuts of choice) 
¼ cup Navitas Organics Cacao Sweet Nibs 
¼ cup creamy peanut butter (or nut or seed butter of choice) 
¼ cup honey (or maple syrup) 
2 Tbsp. Navitas Organics Matcha Powder  
¼ cup Navitas Organics Semi-sweet Cacao Wafers 

DIRECTIONS

In a large bowl, combine oats, coconut, chopped nuts, Cacao Sweet Nibs, peanut butter, honey, and Matcha Powder. Place bowl in fridge for 15 minutes. 
Press ~2 Tbsp. of mixture in palms to shape into ball. Repeat with remaining mixture to make 12 balls. Arrange on large plate or baking sheet and set aside. 
In microwave-safe bowl or saucepan over medium-low heat, melt Semi-sweet Cacao Wafers until smooth and creamy. Drizzle over energy bites.  
Set in fridge for 15 minutes until coating cools and hardens.
