No-bake Chocolate Coconut Cookies

Packed with rich flavor and made with better-for-you ingredients like Semi-sweet Cacao Wafers, these no-bake chocolate coconut delights are the perfect healthier twist on a classic favorite. Easy to make and irresistibly delicious, they're the sweetest way to satisfy your cravings year-round!

INGREDIENTS

16 dates
1 cup unsweetened toasted coconut flakes
¼ cup almond butter or coconut manna 
1 cup Navitas Organics Semi-sweet Cacao Wafers
½ Tbsp. coconut oil 
½ tsp. vanilla extract

Optional: 1 Tbsp. coconut spread or coconut butter

DIRECTIONS

Soak dates in warm water for 10 minutes.

Add softened dates, almond butter or coconut manna, vanilla extract and optional coconut spread to food processor and mix. Add toasted coconut to date mixture and combine in food processor.

Roll dough into 1-1½- inch balls and flatten out. Use a straw to make holes in centers and freeze for 15 minutes.

Combine cacao wafers and coconut oil in small bowl and microwave for 30 sec. – 1 minute, mixing every 10-15 seconds.

Remove cookies from freezer and dip bottoms in chocolate, flip over, and return to freezer for 15 minutes. 

Remove from freezer, flip over and drizzle tops with chocolate. Sprinkle with additional toasted coconut and freeze for 30 minutes or until chocolate has hardened.
