Peppermint Hot Cocoa Fudge

This fudgy, melt-in-your-mouth treat is made with silky cacao wafers, rich cacao powder, luscious coconut milk and just the right touch of festive peppermint. INGREDIENTS

1 can Let's Do Organic Sweetened Condensed Coconut Milk 
1 8 oz. bag Navitas Organics Cacao Wafers
1 Tbsp. Navitas Organics Cacao Powder
1 tsp. vanilla
¼ tsp. peppermint (optional)
¼ cup pure maple syrup
1 cup mini marshmallows

DIRECTIONS

Line a loaf pan with parchment and set aside.

Melt cacao wafers with coconut milk in microwave for two 60-second increments or in a double boiler. Stir in maple syrup, cacao powder, vanilla, and peppermint until a thick batter forms. 


Fold in marshmallows and reserve more for top. Transfer to lined loaf pan, spread evenly and gently press in remaining marshmallows.

Freeze for 2 hours or overnight. Enjoy!
