Creamy Coconut Chia Seed Popsicles Recipe

Cool down with these healthy and delicious popsicles made with creamy coconut milk and nutrient-rich superfoods. Easy to make, they really hit the spot on a hot day. To top it all off, this recipe is dairy-free and vegan so everyone can join in on these fun treats!

INGREDIENTS

14 oz can unsweetened coconut milk, divided

1 Tbsp. Navitas Organics Vanilla & Greens Essential Blend

1 tsp. Navitas Organics Matcha Powder

3 Tbsp. Navitas Organics Chia Seeds

1 Tbsp. pure maple syrup

1 tsp. vanilla extract

DIRECTIONS

Measure 1/2 cup coconut milk and add to a small mixing bowl. Add vanilla & greens superfood blend and matcha powder. Whisk to combine.
Pour remaining coconut milk into a separate mixing bowl. Add chia seeds, pure maple syrup and vanilla extract. Whisk to combine.
Let the chia seed mixture sit in the fridge for 10 minutes to thicken while you prepare the popsicle molds and wipe up your station.
Fill 8 popsicle molds 2/3 of the way with the chia seed mixture. Divide the green coconut milk mixture between the molds to add the matcha and vanilla & greens layer.
Freeze the popsicles without the lid or sticks for about 20 minutes to firm up. After 20 minutes, place the lid on your mold and insert the popsicle sticks, leaving at least 1 1/2 inch of the stick outside of the mold. Freeze popsicles for at least 3 hours or overnight.
To remove them from the mold, let sit on the counter to thaw or run under warm water until you can easily remove the popsicles. Enjoy!
