Cinnamon Chia Energy Bites Recipe

Simple, satisfying and seriously delicious, these protein bites are the fiber-filled energy booster you need to get through the day.

INGREDIENTS

6 Medjool dates, pitted

2 Tbsp. Navitas Organics Chia Seeds + 1 Tbsp. for topping

1 cup Navitas Organics Cashew Nuts

½ cup shredded, unsweetened coconut + ¼ cup for topping

1 tsp. cinnamon + ¼ tsp. for topping

½ tsp. vanilla extract

⅛ tsp. pink Himalayan sea salt

DIRECTIONS

Mix additional ingredients in one small mixing bowl to be used for the topping (¼ cup shredded coconut, 1 Tbsp. chia seeds, ¼ tsp cinnamon) and set aside.

Chop the dates and cashews into small pieces.

Add dates, cashews and all other ingredients to large mixing bowl.

Using one hand, slowly mix all ingredients together using a kneading motion until evenly mixed (about 3 minutes). Add 1 tsp of water if needed to get the last bits to stick together (this helps make things a little stickier).

Roll mixture into 12 small balls between palms of hands and lightly coat each ball with additional topping until evenly coated, rolling between palms.

Store in the refrigerator in an airtight glass container for up to one week.
