Mason jars filled with acai coconut chia parfaits made with Navitas Organics Acai Powder and Chia Seeds, topped with blackberries and toasted coconut flakes.

Acai Coconut Chia Parfait Recipe

Not only are these chia pudding parfaits light, creamy and coconutty, but the nutrition benefits are countless—thanks to the fiber-filled chia seeds and antioxidant-rich acai powder. 

INGREDIENTS 

Blackberry Layer:

1½ cups coconut milk

⅓ cup Navitas Organics Chia Seeds

1 cup blackberries

1 tsp. Navitas Organics Acai Powder

1 tsp. vanilla extract

Pinch of sea salt

Banana Layer:

1 banana, peeled and mashed

1½ cups coconut milk

⅓ cup Navitas Organics Chia Seeds

1 tsp. sweetener of choice

1 tsp. vanilla extract

Toppings (optional):

Coconut flakes

Blackberries

Banana slices

DIRECTIONS

For the blackberry layer: Mix all ingredients together in a bowl, mashing the blackberries with the back of a fork. The mixture will be runny, but the chia seeds will absorb the liquid and create a gel after you let them work their magic overnight or for about 4-5 hours.

For the banana layer: Combine the coconut milk, chia seeds, sweetener, and vanilla in a bowl. Stir well, then cover and refrigerate with the berry layer.

Working in layers, distribute the blackberry and banana layers between 4 small mason jars. Top with additional berries, toasted coconut and/or banana slices.

Seal the jars with their lids and keep refrigerated for up to 3 days.
