Acai Coconut Chia Parfait Recipe
Not only are these chia pudding parfaits light, creamy and coconutty, but the nutrition benefits are countless—thanks to the fiber-filled chia seeds and antioxidant-rich acai powder.
INGREDIENTSBlackberry Layer: 1½ cups coconut milk ⅓ cup Navitas Organics Chia Seeds 1 cup blackberries 1 tsp. Navitas Organics Acai Powder 1 tsp. vanilla extract Pinch of sea salt Banana Layer: 1 banana, peeled and mashed 1½ cups coconut milk ⅓ cup Navitas Organics Chia Seeds 1 tsp. sweetener of choice 1 tsp. vanilla extract Toppings (optional): Coconut flakes Blackberries Banana slices |
DIRECTIONSFor the blackberry layer: Mix all ingredients together in a bowl, mashing the blackberries with the back of a fork. The mixture will be runny, but the chia seeds will absorb the liquid and create a gel after you let them work their magic overnight or for about 4-5 hours. For the banana layer: Combine the coconut milk, chia seeds, sweetener, and vanilla in a bowl. Stir well, then cover and refrigerate with the berry layer. Working in layers, distribute the blackberry and banana layers between 4 small mason jars. Top with additional berries, toasted coconut and/or banana slices. Seal the jars with their lids and keep refrigerated for up to 3 days. Makes 4 servings
