Directions
- Preheat oven to 325°F. In a small saucepan, add cacao butter wafers and maple syrup. Warm over medium heat for 2-3 minutes, whisking frequently until the two are totally combined and there is no visible separation. Add vanilla, whisk once more.
- In a medium bowl, add oats, coconut chips, pecans, hemp seeds, coconut sugar, cinnamon and salt. Pour maple syrup mixture over dry ingredients and stir to combine until oats and nuts are thoroughly coated. Arrange on a parchment-lined baking sheet and spread into an even layer.
- Bake for 15 minutes, turning pan halfway through so it bakes evenly. Remove from oven and allow to cool for 30-45 minutes so granola has time to set.
- Break up granola, and fold in cacao nibs and goji berries after granola has cooled.
- While granola is baking, place fruit in a small bowl. Toss with juice of one lemon and set aside.
- In a medium bowl, add yogurt and maple syrup. Whisk until combined. Add maca powder and goji powder and stir until fully incorporated and no clumps remain.
Assemble yogurt parfait. Layer ¼ cup yogurt into the bottom of 4 cups. Alternate layers of granola, fruit, and then yogurt. Repeat layers until glasses are filled to the top. Enjoy immediately.
