Happy Belly Spiced Seed Cookies

These chunky, seedy, spiced cookies are a nourishing breakfast or snack made with a cozy blend of warming spices, wholesome seeds, and Superfood+ Digestive Blend. Naturally sweetened and packed with fiber-rich ingredients, these soft, satisfying cookies are designed to support digestion while keeping you fueled.

INGREDIENTS

1½ cups almond flour
½ cup gluten-free oats
2 cups unsweetened shredded coconut
2 cups unsweetened coconut flakes
2 Tbsp. Navitas Organics Superfood+ Digestive Blend
3 Tbsp. + ½ cup coconut sugar
¼ cup Navitas Organics Hemp Seeds
¼ cup pumpkin seeds
3 tsp. cinnamon
½ tsp. nutmeg
¼ tsp. each of ground cloves, cardamom and sea salt
¾ cup creamy cashew butter
⅓ cup pure maple syrup
1½ Tbs. coconut oil
2 eggs
2 tsp. vanilla extract
⅔ cup chopped dark chocolate (optional)
½ cup pecans
½ cup raisins
2 Tbsp. Navitas Organics Cacao Nibs

DIRECTIONS

Preheat oven to 350°F and line a baking sheet with parchment.
In a medium bowl, crack eggs and beat in 3 Tbsp. coconut sugar.
Add cashew butter, maple syrup, melted coconut oil and spices. Stir well.
Mix in almond flour, both coconuts, oats, ½ cup coconut sugar, chocolate, pecans, cacao nibs, Digestive Blend, hemp seeds, and salt. Mix well.
Using a cookie scoop, place round balls on
parchment-lined baking sheet. Press down slightly.
Bake 10–12 minutes until edges are just turning golden. Cool on tray and enjoy!
