Chickpea Flour Crepes Recipe

Making crepes may sound complicated, but they're actually very simple to make! These thin, flat pancake-like confections can be folded around any kind of filling or adorned with sweet or savory toppings to make a delicious meal for any occasion. 

INGREDIENTS

1 cup Navitas Organics Chickpea Flour

1 cup plant-based milk of choice

1 egg

¼ tsp vanilla extract

½ tsp honey

Pinch of salt

DIRECTIONS

Whisk all ingredients until well combined with no clumps and let batter sit for about 20 minutes. The batter should be thinner than pancake batter, so add more milk, if needed.

Heat a cast-iron pan and lightly coat the surface with oil.

Pour the crepe batter with a ⅓-cup measuring cup, forming thin pancakes. Flip when bubbles start to pop up.

Repeat with the remaining batter.

Top with yogurt, fresh blueberries, honey or other toppings of choice and enjoy!
