Strawberry Banana Pancakes Recipe

These deliciously fruity and nutrient-packed pancakes take minimal effort and are made of ingredients you likely already have in your kitchen Whip up a batch for a mid-week breakfast or save it for the weekend as a brunch main course.

INGREDIENTS

2 ripe bananas, mashed
1 cup Navitas Organics Grain-Free Flour
1-2 cup plant-based milk 
Juice from 1 lemon
1 Tbsp. cinnamon
1 tsp. vanilla extract
1 cup strawberries

Toppings:
Banana, sliced
Strawberries, sliced
Coconut flakes
Pure maple syrup

DIRECTIONS

Mash 2 bananas in a large bowl, then add cinnamon, lemon juice, vanilla, flour and milk. Stir until well combined, then fold in strawberries.

Melt coconut oil in large pot over medium-high heat. Once hot, place batter and cook for 3-5 minutes on each side.

Repeat the process above until all the batter is gone.

Top with bananas, strawberries, coconut flakes, pure maple syrup or honey and enjoy!

Makes 6-8 pancakes
