Cut squares of pumpkin blondies made with Navitas Organics Chickpea Flour, topped with vegan chocolate and pumpkin seeds

Chocolate Chip Pumpkin Blondies Recipe

With warm and cozy flavors of pumpkin and spices, these chocolate chip pumpkin blondies are a celebration of autumn! They are lightly sweetened with coconut sugar and get a nutrient boost from Navitas Organics Chickpea Flour.

INGREDIENTS

¾ cup Navitas Organics Chickpea Flour

1½ cup almond flour

½ cup coconut sugar

½ cup pumpkin puree

½ cup coconut oil, softened but not melted

2 flax eggs (2 Tbsp. flaxseed meal + 5 Tbsp. water)

½ cup vegan chocolate chips + more for topping

½ tsp. baking powder

1 tsp. vanilla extract

1 tsp. cinnamon

¼ tsp. cardamom

Pinch of salt

DIRECTIONS

Preheat oven to 350˚F. 

Cream together the coconut oil and coconut sugar, then mix in flax eggs, pumpkin puree, and vanilla extract.

In a large mixing bowl, combine dry ingredients (flours, baking powder and spices).

Mix together wet and dry ingredients, and fold in chocolate chips.

Top with additional chocolate chips, if desired, and pour batter into an 8x8-inch pan. 

Bake for 15 minutes.

Let cool completely and cut into squares.
