Apple Pie Overnight Oats Recipe

INGREDIENTS

Oats:
1 cup rolled oats
1½ tsp. Navitas Organics Superfood+ Digestive Blend
½ cup unsweetened applesauce
1 cup milk of choice
 ½ Tbsp. honey
1 tsp. cinnamon
Pinch of salt

Yogurt Layer:
1 cup plain Greek yogurt
½ tsp. vanilla extract
Honey, to taste

Reduced Apples:
1 large apple, thinly sliced
1 tsp. coconut oil
½ Tbsp. honey
½ tsp. cinnamon
Pinch of salt

DIRECTIONS

Add rolled oats, Digestive Blend, applesauce, milk, honey, cinnamon, and salt to a jar or container. Stir until fully combined. Cover and refrigerate at least 4 hours or overnight until thickened.
Mix Greek yogurt with vanilla and a drizzle of honey until smooth.
Warm coconut oil in a small pan over medium heat. Add sliced apple, honey, cinnamon, and salt. Cook 5-7 minutes until apples soften and liquid thickens. Add a splash of water if needed to prevent sticking.
Assemble by layering oats on bottom, yogurt in middle, and warm reduced apples on top. Serve immediately or refrigerate up to three days.
