INGREDIENTS1½ cups Navitas Organics Chickpea Flour ½ cup coconut sugar ⅓ cup coconut oil, melted 1 Tbsp. Navitas Organics Cacao Powder 2 pasture-raised eggs ½ tsp. baking soda ¼ tsp. salt ½ cup Stevia-sweetened dark chocolate chips (or sub. with semi-sweet chocolate chips) |
DIRECTIONSPreheat oven to 350°F. In a medium-sized bowl, whisk together eggs, coconut sugar and melted coconut oil until smooth. Set aside. In a separate bowl, combine chickpea flour, baking soda, Cacao Powder, and salt. Add dry ingredients into wet ingredients and mix until combined. Fold in chocolate chips. Use an ice cream scoop to scoop out dough and roll into a ball between your hands. Place on a parchment paper-lined baking sheet and flatten the dough a little bit. Bake for about 10-12 minutes and let cool before enjoying. Makes 12 cookies
