Chickpea Flour Chocolate Chip Cookies Recipe

What makes a classic chocolate chip cookie recipe even better? When it's grain-free, oozing with rich, chocolatey goodness, and secretly packed with plant-based nutrients! This recipe checks all the boxes and is sure to satisfy even the strongest cravings.

INGREDIENTS

1½ cups Navitas Organics Chickpea Flour

½ cup coconut sugar

⅓ cup coconut oil, melted

1 Tbsp. Navitas Organics Cacao+ Longevity Blend

2 pasture-raised eggs

½ tsp. baking soda

¼ tsp. salt

½ cup Stevia-sweetened dark chocolate chips (or sub. with semi-sweet chocolate chips)

DIRECTIONS

Preheat oven to 350°F.

In a medium-sized bowl, whisk together eggs, coconut sugar and melted coconut oil until smooth. Set aside.

In a separate bowl, combine chickpea flour, baking soda, Cacao+ Longevity Blend, and salt.

Add dry ingredients into wet ingredients and mix until combined. Fold in chocolate chips.

Use an ice cream scoop to scoop out dough and roll into a ball between your hands.

Place on a parchment paper-lined baking sheet and flatten the dough a little bit.

Bake for about 10-12 minutes and let cool before enjoying.

Makes 12 cookies
