Cherry Goji Bars Recipe

A flexible recipe‚ other nuts and dried fruit may be added or substituted with ease.

INGREDIENTS 

1 Cup raw Almonds
1 Cup dried unsweetened Cherries (unsulfured)
1 Cup Coconut Flakes
½ tsp Sea Salt
1  Cup Navitas Organics Goji Berries
¼ Cup Navitas Organics Chia Seeds
6 Tbsp Honey

DIRECTIONS 

Preheat oven to 300 degrees F. Line a baking sheet with parchment paper.

In a food processor‚ use the pulse feature to coarsely chop the almonds.

Add the cherries and pulse several more times into a chunky dry mixture.

Add the coconut flakes‚ sea salt‚ Goji Berries and Chia Seeds‚ then pulse until the ingredients are well tossed. Pour in the honey and briefly process to mix all the ingredients together – do not overmix.

Spread the mixture onto the baking sheet‚ and form into a compact rectangle‚ about a half-inch thick. Bake for 30-40 minutes‚ or until edges have turned golden. Remove from the oven and let cool for 10 minutes. Cut into squares on the pan‚ then let cool completely to allow the bars to further solidify.

Makes about 18 squares
