Cacao Maca Energy Bites Recipe

These delicious energy bites are easy to make and filled with healthy fats, protein and carbohydrates to fuel you when you’re on the go. Made with cacao, maca, dates and oats, they're also gluten and dairy free.

INGREDIENTS

½ cup rolled oats

¼ cup (5-6) dates 

¼ cup nut butter of choice

1 Tbsp. Navitas Organics Cacao Powder

½ Tbsp. Navitas Organics Maca Powder

Pinch of cinnamon

2-3 Tbsp. water

½ cup unsweetened shredded coconut

½ cup Navitas Organics Cacao Nibs

Optional:

¼ tsp. vanilla extract

½ Tbsp. maple syrup

DIRECTIONS

Place the coconut in a small bowl and set aside for later.

Place rolled oats in the food processor and pulse five times. Add the dates, nut butter, cacao powder and maca powder to the food processor and blend for another 10 seconds.

With the food processor still on, add two tablespoons water until the mixture begins to clump together (about 10-20 seconds). If you are adding the vanilla extract and maple syrup, add them at this step.

Turn the food processor off and take a small amount of the mixture and squeeze in your hand. If it easily sticks together, then it is ready. If it still is crumbly and falls apart, add more water, one teaspoon at a time.

When the mixture is ready, roll about one tablespoon at a time into balls, then coat with shredded coconut, cacao powder and/or cacao nibs, as desired.

Place in an airtight container at room temperature. Keeps for 2-3 days.

Makes 8-10 balls
