Tropical Island Truffles Recipe
A tropical treat! These truffles are great to keep on hand in the fridge for a quick snack or a lovely dessert.
INGREDIENTS6 Medjool dates (pitted) ¼ cup dried pineapple or mango 3 Tbsp. coconut cream 2 Tbsp. Navitas Organics Maca Powder ½ tsp. vanilla extract ½ cup cashews ¼ cup Navitas Organics Chia Seeds 1 Tbsp. Navitas Organics Goji Berries ½ cup shredded coconut ¼ cup sunflower seeds 1 Tbsp. golden raisins ½ tsp. sea salt

DIRECTIONSCombine dates, pineapple, coconut cream, maca powder and vanilla extract in a food processor until combined and a smooth dough is formed. Add the remaining ingredients and pulse to desired texture. Roll into 1 inch balls and place on a baking sheet or large plate. Allow the truffles to “set” in the fridge for 30 minutes before eating. Stored in an airtight container in the fridge, these truffles will last for a few months…but good luck trying to save them that long! Makes 20 truffles
