Superfood Cookies Recipe

These superfood-boosted cookies are an extra special treat since they're loaded with immune-supporting antioxidants! Enjoy them as an afternoon snack when you’re craving something fruity and sweet or as a healthier dessert option you can feel good about.

INGREDIENTS

1 small ripe banana, mashed
1 large egg
2 Tbsp. pure maple syrup (or honey)
⅓ cup nut or seed butter
½ tsp. vanilla extract
1 cup gluten-free rolled oats
¼ cup gluten-free oat flour
¼ cup Navitas Organics Goji Berries
¼ cup mini chocolate chips
½ tsp. Navitas Organics Camu Powder

DIRECTIONS

In a mixing bowl, mash your ripe banana with a fork or hand mixer. Next, add the egg, maple syrup, nut or seed butter and vanilla extract.
To the wet ingredients, add the rolled oats, oat flour, goji berries, chocolate chips and camu powder.
Preheat your oven to 350°F. Let the cookie mixture sit for 5 minutes to allow the oats to soak.
Line a baking sheet with parchment paper. Use a small cookie scoop to portion out the cookie mixture into 8-10 cookies.
Wet your hands and use your fingers to gently press down on each of the cookie balls to slightly flatten and shape the cookies.
Top cookies with a few more goji berries and mini chocolate chips and bake for 10-15 minutes until lightly golden. Let cool before enjoying. Store these cookies in an airtight container for up to 5 days at room temperature or in the fridge.
