Pumpkin Spice Matcha Latte Bowl

Cozy meets vibrant in this swirled smoothie bowl. Creamy pumpkin purée with warm spices blends perfectly with earthy matcha, creating a gorgeous two-toned swirl. Topped with crunchy cacao nibs, every spoonful is equal parts comforting and energizing.

INGREDIENTS

2 cups frozen cauliflower florets, divided
1 banana, sliced and frozen, divided
½ cup milk of choice, divided
4 pitted dates, divided
2 scoops of vanilla protein powder, divided
¼ tsp. pumpkin spice, divided
1 tsp. Navitas Organics Matcha Powder
¼ cup pumpkin purée
Toppings:
Coconut whip
Navitas Organics Cacao Nibs

DIRECTIONS

In a blender, combine 1 cup frozen cauliflower, half frozen banana, ¼ cup milk, 2 dates, and half of the pumpkin spice.
Add matcha and blend until rich and creamy. Transfer matcha smoothie to serving bowl and place it in freezer.
Repeat step 1, using remaining ingredients.
Add pumpkin and blend until rich and creamy. Transfer pumpkin smoothie to same serving bowl as matcha smoothie.
Use a small spatula to partially swirl two colors together.
Top with coconut whip and cacao nibs. Enjoy!
