No-bake Gingerbread Cookie Dough Bars

Made with creamy cacao butter wafers, these bars are perfectly rich, subtly sweet and packed with gingerbread spices for a festive treat that’s irresistibly soft and chewy. Whether you need a quick dessert or a cozy snack, this recipe comes together in minutes—no oven required!

INGREDIENTS

Wet:

¾ cup almond butter
¼ cup brown sugar
1 Tbsp. ground flaxseed
3 Tbsp. water
1 tsp. vanilla extract

Dry:
1 cup almond flour
1 tsp. cinnamon
1 tsp. ginger
Pinch of ground cloves
Pinch of salt

Topping:
¾ cup vegan white chocolate chips
¼ cup Navitas Organics Cacao Butter Wafers
1 tsp. vanilla extract
Sprinkle of cinnamon (for garnish)

DIRECTIONS

In a small bowl, mix together ground flaxseed and water and let sit for a few min. to make flax egg.

In a medium bowl, mix together wet ingredients until smooth. Add dry ingredients and stir until fully combined into dough.

Line loaf pan with parchment and press dough evenly into pan.

In a double boiler, melt white chocolate chips and cacao butter wafers over low heat, stirring until smooth. Remove from heat and stir in vanilla.

Pour melted mixture over dough and spread evenly with spatula. Top with cinnamon, place in fridge for ~30 min. and then remove, cut into bars and enjoy!
