Matcha Yogurt Parfait Recipe
This easy dairy-free recipe can be made ahead of time and stored in the refrigerator to be topped with superfood goodies and devoured for breakfast, dessert or as an on-the-go snack.
In a medium bowl, mix chia seeds and yogurt together, sift in matcha powder and whisk until the powder has completely mixed in.
Place in the fridge for 30 minutes to allow the chia to do its thing.
While you wait, in a separate smaller bowl, mix the coconut shreds with the acai powder until the coconut is fully coated and you have a nice purple-colored coconut.
After 30 minutes, evenly spoon matcha yogurt into two serving glasses.
Top with raspberries, hemp seeds, granola and coconut shreds.
Serve and enjoy!
