
Lemon Blueberry Pie Recipe
Bright, zesty and bursting with juicy blueberries, this pie is a superfood twist on a classic favorite! INGREDIENTSOne 9-inch tart crust
¾ cup lemon curd
½ lb. blueberries
1 Tbsp. honey
2 Tbsp. Navitas Organics Chia Seeds

DIRECTIONSPreheat oven to 375°F. Line a tart pan with tart crust and score the bottom with a fork. Cover with pie weights and bake for 10-15 minutes until golden. Pour lemon curd on top of crust and bake for another 5-10 minutes until set. Meanwhile, heat blueberries and honey in a small pot until blueberries release juice. Crush blueberries and bring mixture to a simmer. Mix chia seeds into blueberry mixture and set aside to chill. Layer blueberry jam on top of lemon curd and chill for 2-3 hours until set.
