Grain-Free Protein Pancakes Recipe

Say goodbye to your plain ‘ol pancakes and meet your new favorite stack. These gluten- and grain-free pancakes* are packed with plant-based protein and made even better with sweet or savory toppings.

INGREDIENTS

1 cup Navitas Organics Grain-Free Flour

3 Tbsp. coconut sugar

1 tsp. baking powder

½ tsp. baking soda

¾ tsp. sea salt

½ tsp. cinnamon

1 egg

1 cup milk of choice

2 Tbsp. lemon juice

1 Tbsp. coconut oil, melted

1 tsp. vanilla extract

Coconut or preferred oil, for pan

DIRECTIONS

In a medium bowl, mix together the dry ingredients. In a larger bowl, beat the egg, then add the remaining wet ingredients and whisk to combine. Slowly add the dry ingredients to the wet and whisk until combined.

Lightly oil and heat a large pan or griddle over low heat. Spoon two tablespoons of batter per pancake into the pan. Cook low and slow, until bubbles begin to appear in the center of each pancake.

Flip and cook until set, about one minute more. Repeat with remaining batter. Top with fresh fruit, pure maple syrup or your favorite toppings. Enjoy!

Makes 8 medium pancakes
