Goji Berry Granola Recipe

INGREDIENTS

¼ cup unrefined coconut oil

⅓ cup pure maple syrup

2½ cups rolled oats

½ cup raw walnuts, chopped

½ cup raw pumpkin seeds

½ cup unsweetened flaked coconut

2 tsp. cinnamon

½ tsp. sea salt

1 tsp. vanilla extract

1 cup Navitas Organics Goji Berries

½ cup crystalized ginger, chopped

DIRECTIONS

Preheat oven to 300°F. Pour coconut oil and maple syrup into a small saucepan and lightly boil over medium heat for five minutes.

Meanwhile, mix oats, walnuts, pumpkin seeds, coconut, cinnamon, and salt together in a large bowl.

Remove oil and syrup mixture from heat, add vanilla extract, and pour over the oat mixture. Stir well to coat.

Spread granola in a single layer on a baking sheet, pressing down with a spatula. Bake until golden, about 20 minutes.

Remove from oven and sprinkle goji berries and ginger on top. Allow to cool completely, then use a spatula to scrape granola into an airtight container.

Store at room temperature.
