Frankenstein Rice Crispy Treats

These Halloween treats are the perfect combo of fun, festive and downright delicious—made with organic matcha powder for that naturally eerie green hue and a boost of earthy, energizing flavor. Each square is dipped in rich, bittersweet cacao wafers to give your favorite monster a decadent chocolate edge that’s both kid-approved and adult-loved.

INGREDIENTS

4 Tbsp. salted butter
2 tsp. Navitas Organics Matcha Powder
10 oz. marshmallows
6 cups rice cereal 
8 oz. Navitas Organics Bittersweet Cacao Wafers
For Decorating: 
Candy eyes
Mini marshmallows

DIRECTIONS

In a large pot, melt butter over low heat. Add matcha powder and stir to combine. Add marshmallows and stir until completely melted and smooth. Remove from heat.
Stir in rice cereal, folding until evenly coated in marshmallow mixture.
Line an 9x9-inch baking pan with parchment and lightly grease with nonstick spray or oil. 
Transfer mixture to prepared pan. Use back of greased spoon or spatula to spread and press evenly into pan. Refrigerate for 20 minutes or until set. Once set, remove from the pan and cut into 9 rectangles. 
In a microwave-safe bowl, melt cacao wafers in 20-second intervals, stirring between, until smooth. Dip top third of each treat in melted chocolate and place on parchment-lined cutting board.
Use a melted chocolate to attach candy eyes and freeze for 5–10 minutes to set.
For “bolts,” coat one end of mini marshmallow with melted chocolate and stick on each side of treat.
Transfer melted chocolate to small sandwich bag, snip corner and pipe mouths and details. Return to freezer for a few minutes to set.
