Coconut Banana Bread Recipe

Say hello to your new fave sweet treat! Every bite of this grain-free banana bread is a little bit of heaven! The best part is, it’s packed with superfood ingredients galore.

INGREDIENTS

½ cup coconut flour

¼ cup ground flaxseed

1 Tbsp. Navitas Organics Maca Powder

1 Tbsp. coconut sugar

2 tsp. cinnamon

1 tsp. cardamom

1 tsp. baking soda

½ tsp. sea salt

3 ripe bananas, mashed

4 organic eggs, beaten

3 Tbsp. water

3 Tbsp. coconut yogurt

3 Tbsp. coconut oil, melted

1 tsp. vanilla extract

1 banana, sliced lengthwise

1 Tbsp. Navitas Organics Hemp Seeds

1 Tbsp. Navitas Organics Cacao Nibs

DIRECTIONS

Preheat over to 350˚F. Line a regular loaf pan with parchment paper and set aside.

In a mixing bowl, add coconut flour, flaxseed, maca powder, coconut sugar, cinnamon, cardamom, baking soda, and sea salt, and stir until combined. Make a well in the center and add the mashed bananas, eggs, water, coconut yogurt, coconut oil and vanilla. Stir until well combined.

Pour batter into the prepared pan. Lay the sliced banana halves over the top, then sprinkle with hemp seeds, cacao nibs and any other toppings of choice.

Bake for 50-55 minutes. Let cool for 10 minutes in the pan, then remove to a wire cooling rack. When no longer steaming, slice, serve and enjoy!
