Chocolate Walnut Brownie Cookies Recipe

White chocolate and walnuts wrapped in a fluffy cookie-shaped brownie—it doesn't get much better! These brownie cookies are a decadent but health-conscious twist on a classic treat. They’re made with organic cacao powder and granulated monk fruit sweetener so you can indulge without the guilt.

INGREDIENTS

1¼ cup gluten-free all-purpose flour

¾ cup Navitas Organics Keto Cacao Powder

1 tsp. baking powder

¾ tsp. baking soda

½ tsp. sea salt

½ cup walnuts, roughly chopped

1 cup sugar-free white chocolate chips

1 cup granulated monk fruit sweetener

½ cup coconut oil, melted

¼ cup brewed coffee

Optional: sprinkle of flaky sea salt

DIRECTIONS

In a mixing bowl, whisk together flour, Keto Cacao Powder, baking powder, baking soda, and sea salt.

In a separate bowl, whisk monk fruit sweetener, coconut oil and coffee until well mixed.

Add wet ingredients to dry ingredients and stir until a dough is formed.

Stir in white chocolate chips and walnuts evenly.

Chill dough in fridge for 20-30 minutes.

Prepare a baking sheet with nonstick baking mat or lightly grease with oil.

Preheat oven to 350˚F. 

Use cookie scoop or your hands to form small cookie dough balls and space evenly on cookie sheet. Slightly flatten and sprinkle with flaky salt, if using.

Bake for 11-13 minutes until cookies show slight cracking on the surface and are thoroughly baked. Allow to cool and serve warm.
