This Cherry Goji Berry Loaf is the perfect mix of moist texture and rich flavor, making it an irresistible treat for any occasion. Ingredients
- 2 cups gluten-free flour
- 1 tsp. baking soda
- 1 tsp. baking powder
- ¼ tsp. salt
- ½ cup vegan butter, softened
- ½ cup granulated sugar
- ¼ cup brown sugar
- 2 flax eggs (2 Tbsp. ground flax + 6 Tbsp. water)
- ½ cup plain vegan yogurt
- 1 tsp. vanilla
- ⅓ cup vegan milk
1 cup fresh cherries, pitted, chopped + tossed in 1 Tbsp. flour

Directions
- Preheat oven to 350°F and grease a 9x5-inch loaf pan.
- Make flax egg and let it sit for 10 minutes. Pit and fourth cherries, then toss in with flour.
- In a medium-sized bowl, whisk together flour, baking soda, baking powder and salt until combined.
- In a separate large bowl, beat butter until fluffy. Add granulated sugar and brown sugar, mixing until fully combined. Add flax egg, yogurt and vanilla and mix again. Mix in milk.
- Slowly add dry mixture into wet, mixing until a soft dough forms. Fold in cherries and goji berries.
Pour or scoop into greased pan and bake for 50-60 minutes. Let cool for 10 minutes before cutting.
