Blueberry Acai Buckwheat Pancakes Recipe

These delicious pancakes are super easy to make. Acai powder adds a naturally sweet, fruity flavor and is packed with antioxidants‚ minerals and vitamins.

INGREDIENTS

1 Egg

1/2 cup Buckwheat Flour

1 Tbsp Navitas Organics Acai Powder

2 Tbsp coconut sugar

1/2 cup Water

1 tsp Vanilla Extract

1 tsp Baking Powder

1/2 tsp Sea Salt

1/2 cup Blueberries, fresh or frozen 

Coconut oil, for cooking

DIRECTIONS

Whisk the egg in a medium-sized bowl.

Add the buckwheat flour, acai powder, lucuma, coconut palm sugar, water, vanilla, baking powder and salt, and stir until well combined.

Heat coconut oil over medium heat in a cast iron griddle or heavy skillet.

Brush it over the surface when it melts. Ladle batter onto the hot pan. Cook for about 2 minutes until the tops are bubbly and edges appear dry.

Flip over pancakes and cook for about a minute until the bottoms are brown.
