Blueberry Acai Buckwheat Pancakes

These delicious pancakes are super easy to make. Lucuma adds a naturally sweet maple flavor and is packed with antioxidants‚ minerals and vitamins.

INGREDIENTS

1 egg

1/2 cup buckwheat flour

1 Tbsp Navitas Organics Acai Powder

1 Tbsp Navitas Organics Lucuma Powder

1 Tbsp Navitas Organics Coconut Palm Sugar

1/2 cup water

1 tsp vanilla extract

1 tsp baking powder

1/2 tsp sea salt

1/2 cup fresh or frozen blueberries

Coconut oil, for cooking

DIRECTIONS

Whisk the egg in a medium-sized bowl.

Add the buckwheat flour, Acai Powder, Lucuma, Coconut Palm Sugar, water, vanilla, baking powder and salt, and stir until well combined.

Heat coconut oil over medium heat in a cast iron griddle or heavy skillet.

Brush it over the surface when it melts. Ladle batter onto the hot pan. Cook for about 2 minutes until the tops are bubbly and edges appear dry.

Flip over pancakes and cook for about a minute until the bottoms are brown.
