Almond Butter & Superfruit Chia Jam Sandwich Recipe

This superfood spin on the lunchtime classic opens up a world of options for creative, nutrient-rich additions and pairings.

INGREDIENTS

For the Sandwich:

2 slices bread of choice

Almond butter

Superfruit chia jam (recipes below)

Blueberry-Acai Chia Jam:

3 cups frozen blueberries

¼ cup coconut sugar

2 Tbsp. lemon juice, fresh squeezed

1½ tsp. Navitas Organics Acai Powder

Pinch of sea salt

3 Tbsp. Navitas Organics Chia Seeds

Cherry-Camu Chia Jam:

2 cups frozen cherries

2 Tbsp. coconut sugar

1½ Tbsp. lemon juice, fresh squeezed

1 tsp. Navitas Organics Camu Powder

Pinch of sea salt

2 Tbsp. Navitas Organics Chia Seeds

DIRECTIONS

Place frozen fruit in a saucepan over medium heat and cook, stirring occasionally, until the fruit begins to release its juices, about five minutes.

 Add the coconut sugar and lemon juice, and smash some of the fruit to create a more jammy consistency. Bring to a boil, reduce to a simmer and cook until the liquids have reduced by half, 10-15 minutes.

Remove from heat, and stir in the Navitas Organics superfood powder and a pinch of salt.

Add the chia seeds and stir until thoroughly mixed. Let cool 10 minutes before spreading on bread. Transfer leftover jam to a heatproof jar and cool completely before covering and refrigerating for future enjoyment!
