Acai Energy Bites Recipe
These easy, convenient, superfood-packed bites are brimming with plant-based antioxidants and fruity flavor. Pack and take them on the go for when you need a boost of energy or have them as an after-dinner treat when you're craving something sweet!
INGREDIENTS1 cup Navitas Organics Cashew Nuts 1 cup frozen blueberries 5 Medjool dates 1 cup hot water 8 Tbsp. coconut flour 1 Tbsp. Navitas Organics Acai Powder Unsweetened coconut flakes, for coating

DIRECTIONSSoak the dates in the hot water for at least 30 minutes. Before using the dates, drain the water well and remove any date shells. Pour 1/4 cup of the remaining water into a food processor or blender and add all of the other ingredients. Blend until well incorporated. Scoop out the mixture about one tablespoon at a time and shape into balls. Coat with coconut flakes or desired coating and enjoy! Makes about 10 bites
