Watermelon Goji Gazpacho

Goji Berries increase flavor and nutrition in this cool summery soup. Super refreshing!

INGREDIENTS

½ Cup Navitas Organics Goji Berries 
4 Cups Watermelon, cubed
1 Cup Cucumber, peeled and diced
¼ Cup Basil, minced
1 red Jalapeno Pepper, seeds removed and minced
¼ Cup freshly squeezed Lime juice
pinch Sea Salt

DIRECTIONS

In a food processor or blender, blend all of the ingredients together into a puree. Refrigerate for 30 minutes before serving and serve chilled. 
Optional: top with extra minced cucumber, watermelon and black pepper.
