Watermelon Goji Gazpacho Recipe
Goji berries increase the flavor and nutrition of this cool, summertime soup. Enjoy this super refreshing recipe on a hot summer day and soak up all the superfood goodness!
INGREDIENTS½ cup Navitas Organics Goji Berries 4 cups watermelon, cubed 1 cup cucumber, peeled and chopped ¼ cup basil 1 red jalapeno pepper, seeds removed and chopped ¼ cup freshly squeezed lime juice Pinch of sea salt |
DIRECTIONSIn a food processor or blender, blend all of the ingredients together into a puree. Refrigerate for 30 minutes before serving and serve chilled. Optional: top with extra minced cucumber, watermelon and black pepper. Makes 6 servings
