Watermelon Goji Gazpacho Recipe

Goji Berries increase the flavor and nutrition in this cool, summery soup. Super refreshing on a hot day!

INGREDIENTS

½ cup Navitas Organics Goji Berries

4 cups watermelon, cubed

1 cup cucumber, peeled and chopped

¼ cup basil

1 red jalapeno pepper, seeds removed and chopped

¼ cup freshly squeezed lime juice

Pinch sea salt

DIRECTIONS

In a food processor or blender, blend all of the ingredients together into a puree. Refrigerate for 30 minutes before serving and serve chilled. 
Optional: top with extra minced cucumber, watermelon and black pepper.

Makes 6 Servings
