Chocolate Maqui Energy Bites

These rich, no-bake bites blend creamy coconut, nut butter and antioxidant-rich maqui powder for a nourishing boost that’s as delicious as it is energizing. Rolled into bite-sized perfection and finished with a drizzle of velvety semi-sweet cacao wafers, they’re the ultimate grab-and-go treats.

INGREDIENTS

1 cup coconut cream
2 tsp. Navitas Organics Maqui Powder
4 Tbsp. almond butter
3-4 Tbsp. pure maple syrup
1 tsp. vanilla extract
Pinch of salt
¼ cup Navitas Organics Semi-Sweet Cacao Wafers
1 tsp. coconut oil
15-cavity silicone mold tray

DIRECTIONS

Set a saucepan over medium-low heat and add coconut cream, maqui powder, almond butter, maple syrup, vanilla extract, and salt. Whisk together until smooth. Transfer mixture to heat-proof container.

Place silicone mold on baking tray and fill each cavity evenly with mixture. Place in freezer for 1 hour or until bites are firm.

To a small bowl, add cacao wafers and coconut oil and microwave in 20-second increments, mixing in between, until melted and smooth.

Remove bites from freezer and pop out of molds onto baking sheet lined with parchment paper. Drizzle each bite with chocolate mixture, then place back in freezer for a few minutes so chocolate can set.

Remove and enjoy! Store remaining bites in freezer until ready to enjoy.
