Vegetarian Elderberry Dumplings Recipe
These homemade vegetarian dumplings are chock-full of healthy ingredients—including ginger and organic elderberry powder—known to support your immune system. Serve them warm with your favorite dip or add them to a broth to make a filling soup! The best part: the elderberry powder adds an earthy taste and a beautiful color to these delicious dumplings.
1¼ cups All-Purpose Flour
1 tsp Navitas Organics Elderberry Powder
1 Organic Egg
2 Tbsp Water
1/4 tsp Salt
1-inch piece Ginger, peeled
2 cloves Garlic, peeled
1/2 cup Red Cabbage, chopped
1/2 cup White Mushrooms, sliced
1 Orange Bell Pepper, cored
1/2 cup Firm Tofu, chopped
2 Tbsp Soy Sauce (or sub: Liquid Aminos)
2 Tbsp Sesame Oil
Add the flour, elderberry powder, egg, water and salt to a Thermomix® and use the dough kneading function for 30 seconds (or mix in a stand-mixer with dough hook attachment until dough forms). Let the dough rest under a damp towel for 10 minutes.
In the meantime, make the filling: add the ginger and garlic to a Thermomix® mixing bowl (or food processor) and chop on speed 5 for 5 seconds, then scrape and add the remaining ingredients. Chop again on speed 5 for 5 seconds and mix everything well with a spatula.
Roll the dumpling dough into 4-inch circles, then fill with the filling and seal using some water around the edges.
Add 1 liter of water to the Thermomix® mixing bowl, then add the dumplings to a greased Varoma dish and steam on the Thermomix® for 20 minutes on the Varoma setting on speed 1.
