Stack of superfood seed bars made with Navitas Organics Goji Berries, Hemp Seeds and Cacao Nibs

Superfood Seed Bar Recipe

A heavenly, nut-free‚ mineral-rich bar packed with all–star superfoods in each bite! Creamy tahini and coconut oil combine with cacao, goji and an array of seeds for a snack that's high in protein‚ zinc‚ calcium and essential fatty acids. These bars are a great post workout or anytime snack that are not too sweet. It’s hard to stop with just one!

INGREDIENTS

½ cup coconut nectar or maple syrup

⅓ cup tahini

¼ cup coconut oil, melted

1 vanilla bean, scraped or a pinch of vanilla powder

1 cup pumpkin seeds

1 cup sunflower seeds

½ cup Navitas Organics Goji Berries

½ cup shredded coconut

¼ cup sesame seeds

¼ cup Navitas Organics Cacao Nibs

¼ cup Navitas Organics Hemp Seeds

Pinch of salt

DIRECTIONS

Blend coconut nectar, tahini, coconut oil, and vanilla until smooth and set aside.
In a medium-sized mixing bowl combine remaining dry ingredients. 
Add in coconut nectar muxture and mix until well combined.
Place half the mixture in a food processor and process until it's in very small pieces.Transfer back to the mixing bowl and recombine.
Press mixture into an 8x8 inch pan lined with parchment paper or plastic wrap and place in the freezer until firm, about 30-60 minutes.
Cut into bars and store in the refrigerator.

Makes 16 bars
