Superberry Focus Bites Recipe
The simple addition of the Superfood+ Adaptogen Blend incorporates a powerful blend of superfoods that help support focus, energy and balance.
INGREDIENTS
1¼ cup unsweetened shredded coconut, divided ½ packed cup medjool dates, pitted (about 8 large) 2 Tbsp. almond butter 2 Tbsp. Navitas Organics Superfood+ Adaptogen Blend ¼ tsp. ground cinnamon ⅛ tsp. ground cardamom ⅛ tsp. sea salt 3 Tbsp. Navitas Organics Goji Berries |
DIRECTIONS
Add ¼ cup of the coconut to a food processor. Process briefly into a coarse powder, then transfer to a bowl and set aside. Place the dates, almond butter, Adaptogen Blend, cinnamon and cardamom in the food processor. Process until a chunky paste has formed. Add the coconut and Goji Berries, and process until the ingredients are dispersed, leaving plenty of texture. Place a sheet of plastic wrap on a flat surface and spill the mixture out on top. Press into a compact ball, then loosely wrap with plastic. Use your hands or a rolling pin to flatten and shape the mixture into a 1-inch flat square. Unwrap and sprinkle with remaining coconut, then fold the wrap on top and press the coconut into place. Makes 16 bites |

- Freeze for 30 minutes, then cut into 16 squares. Bites may be enjoyed at room temperature, where they will last for up to 2 weeks.
