Superberry Focus Bites Recipe

The simple addition of the Superfood+ Adaptogen Blend incorporates a powerful blend of superfoods that help support focus, energy and balance. 

INGREDIENTS

 

1¼ cup unsweetened shredded coconut, divided

½ packed cup medjool dates, pitted (about 8 large)

2 Tbsp. almond butter

2 Tbsp. Navitas Organics Superfood+ Adaptogen Blend

¼ tsp. ground cinnamon

⅛ tsp. ground cardamom

⅛ tsp. sea salt

3 Tbsp. Navitas Organics Goji Berries

DIRECTIONS

 

Add ¼ cup of the coconut to a food processor. Process briefly into a coarse powder, then transfer to a bowl and set aside.

Place the dates, almond butter, Adaptogen Blend, cinnamon and cardamom in the food processor. Process until a chunky paste has formed. Add the coconut and Goji Berries, and process until the ingredients are dispersed, leaving plenty of texture.

Place a sheet of plastic wrap on a flat surface and spill the mixture out on top. Press into a compact ball, then loosely wrap with plastic. Use your hands or a rolling pin to flatten and shape the mixture into a 1-inch flat square. 

Unwrap and sprinkle with remaining coconut, then fold the wrap on top and press the coconut into place. 
Freeze for 30 minutes, then cut into 16 squares. Bites may be enjoyed at room temperature, where they will last for up to 2 weeks.
