Super Boost Pancakes Recipe

This delicious stack may look dangerously decadent, but it's surprisingly vegan, and free of grain, gluten and refined sugar, thanks to its healthful, plant-based ingredients!

INGREDIENTS

2 cups MALK Organics Unsweetened Almond MALK

2 large ripe bananas

¼ cup Just Date Syrup

¼ cup nut butter of choice

1 tsp. baking powder

1 tsp. cinnamon

1 cup Navitas Organics Grain-Free Flour

Coconut oil, for cooking

DIRECTIONS

In a blender, blend Almond MALK, bananas, Just Date Syrup, nut butter, baking powder, and cinnamon until smooth. Pour into a bowl.

Slowly whisk Grain-Free Flour into the mixture until smooth. If the batter feels too loose, add 1 more Tbsp. flour.

Set nonstick pan on medium-low and heat up coconut oil to just coat the pan. Pour circles of batter onto the pan and wait until the edges are browning and crisp, then flip. Wait until your pancakes are just cooked through, and enjoy warm, topped with in-season fruit and more syrup!

Note: Do not blend Grain-Free Flour in blender for this recipe; you run the risk of all those super veggies absorbing too much liquid for a more dough-like instead of batter consistency.

Makes about 6 pancakes
