Super Berry Pop Tarts Recipe

These better-for you breakfast pastries are so delicious and fruity, you may want to make a double batch! Topped with an immune-boosting elderberry glaze and a sprinkle of protein-packed hemp seeds, they're the perfect morning meal for any day of the week.

INGREDIENTS

Dough:
2 cups all-purpose flour
1 Tbsp. coconut sugar
½ tsp. Kosher salt
½ cup solid coconut oil
⅓ cup plant-based milk

Filling:
1¼ cup frozen raspberries
2 Tbsp. pure maple syrup
2 Tbsp. Navitas Organics Chia Seeds
1 tsp. Navitas Organics Camu Powder

Egg Wash Substitute:
2 Tbsp. plant-based milk + 1 Tbsp. pure maple syrup

Glaze:
½ cup powdered sugar
3 tsp. plant-based milk
1 tsp. Navitas Organics Elderberry Powder
Navitas Organics Hemp Seeds, for topping

DIRECTIONS

In a mixing bowl, combine flour, coconut sugar and salt. Add solid coconut oil and use a pastry cutter to mix ingredients until a crumbly dough forms. Add milk and use pastry cutter to bring dough together.
Divide dough into two discs and chill in fridge for ~30 minutes to let flour absorb moisture.
Add filling ingredients to a glass mixing bowl and microwave for 30-60 seconds or until fruit has softened and released some of its juices. Use a fork to mash fruit to a smooth consistency. Cover bowl and place filling in fridge to thicken.
Remove dough from fridge and flour a flat surface for rolling out the crust. If dough is too crumbly or dry, work the dough with your hands to warm up the coconut oil before rolling. Sprinkle dough with flour throughout the rolling process to prevent it from sticking to rolling pin.
After creating 2 medium-sized rectangles, use a pizza cutter or knife to cut a straight line along the rough edges. Make one horizontal and one vertical cut to create 4 smaller rectangles. Repeat with the other sheet of dough to create 8 rectangles.
Line a baking sheet with parchment paper and preheat oven to 400˚F.
Add 2 tablespoons of filling to the center of 4 rectangles. Brush edges with egg wash substitute and place remaining 4 rectangles on top to cover filling.
Use a fork to score edges, brush pop tarts with egg wash substitute and use a fork to poke a few holes across the tops.
Bake for ~15 minutes or until edges are lightly golden brown. Let cool before frosting.
Use a whisk to combine frosting ingredients. Add milk a little at a time until desired consistency is reached. Frost cooled pop tarts and sprinkle with hemp seeds. Store at room temperature up to 5 days.
