Ingredients
- 2 cups all-purpose flour
- 1 Tbsp. coconut sugar
- ½ tsp. Kosher salt
- ½ cup solid coconut oil
- ⅓ cup plant-based milk
- 1¼ cup frozen raspberries
- 2 Tbsp. pure maple syrup

- 2 Tbsp. plant-based milk + 1 Tbsp. pure maple syrup
- ½ cup powdered sugar
- 3 tsp. plant-based milk

Directions
In a mixing bowl, combine flour, coconut sugar and salt. Add solid coconut oil and mix ingredients until a crumbly dough forms. Add milk and bring dough together.
Divide dough into two discs and chill in fridge for ~30 min.
Add filling ingredients to a bowl and microwave for 30-60 sec. Mash fruit until smooth. Cover bowl and refrigerate to thicken.
Remove dough from fridge and flour a flat surface for rolling out the crust.
After creating 2 medium-sized rectangles, cut a straight line along rough edges. Make 1 horizontal and 1 vertical cut to create 4 smaller rectangles. Repeat with other sheet of dough to create 8 rectangles.
Line a baking sheet with parchment and preheat oven to 400˚F.
Add 2 Tbsp. filling to center of 4 rectangles. Brush edges with egg wash substitute and place remaining 4 rectangles on top to cover filling.
Use a fork to score edges, brush pop tarts with egg wash substitute and poke holes across tops. Bake for ~15 min. or until edges are golden brown. Let cool before frosting.
Use a whisk to combine frosting ingredients. Add milk until desired consistency is reached. Frost cooled pop tarts and sprinkle with hemp seeds. Store at room temperature up to 5 days.
