Super Berry & Cherry Squares Recipe
These deliciously tart squares are adorned with a crunchy mulberry crumble to complement the juicy filling made with goji berries, goldenberries and cherries. The filling can be made with either goji berries or goldenberries, but using both takes this already irresistible dessert to the next level!
INGREDIENTSFor the Filling: ½ cup Navitas Organics Goji Berries ½ cup Navitas Organics Goldenberries 3 cups frozen pitted cherries, thawed ¼ cup maple syrup 1 tsp. lemon zest 2 Tbsp. lemon juice 2 Tbsp. corn starch Pinch of sea salt For the Crumble: 2 cups almond flour ½ cup Navitas Organics Grain-Free Flour ½ cup arrowroot flour 2 tsp. cinnamon Pinch of sea salt ¼ cup coconut oil 6 Tbsp. maple syrup 2 tsp. vanilla extract ¼ cup Navitas Organics Mulberries, chopped 2 Tbsp. Navitas Organics Cacao Nibs |
DIRECTIONSPreheat oven to 350°F. Line a 9x9-inch baking pan with parchment paper. In a small bowl, combine goji berries and goldenberries. Cover with water and soak for 15 minutes. Drain well. Make the crumble: Whisk together almond flour, Grain-Free Flour, arrowroot flour, cinnamon, and salt. In another small bowl, whisk together coconut oil, maple syrup, and vanilla extract. Stir the wet mixture into the dry mixture and mix until the dough becomes crumbly. Reserve ¼ cup of dough and set aside. Press the rest of the dough into the bottom of the prepared baking pan. Make the filling: In a large bowl, combine goji berries, goldenberries, cherries, maple syrup, lemon zest, lemon juice, corn starch, and salt. Transfer to the pan and spread into an even layer over the dough layer. Sprinkle mulberries and reserved dough over the filling layer. Bake for 30 minutes, until crumbles become light golden brown. Let cool completely and cut into squares. Sprinkle cacao nibs on top and enjoy! Makes 16 squares
