Strawberry Acai Granola Bars

These homemade no-bake granola bars are the perfect blend of sweet, tangy and crunchy, with every bite bursting with the vibrant flavors of tart strawberries and nutrient-rich acai. Packed with wholesome oats, crunchy nuts and a touch of honey, they’re perfect for a quick energy boost or a delicious pick-me-up.

INGREDIENTS

3 cups gluten-free rolled oats
2 Tbsp. Navitas Organics Chia Seeds
¼ cup dried strawberries
¼ cup sliced almonds
1 Tbsp. Navitas Organics Acai Powder
1 cup Medjool dates, about 15 (pitted)
½ cup cashew butter
½ cup honey
2 Tbsp. coconut oil

DIRECTIONS

In a large bowl, combine oats, sliced almonds, chia seeds, strawberries, and acai powder. Set aside.
Add dates to a blender or food processor and process until they form a sticky paste.
Melt cashew butter, honey and coconut oil together, then add mixture and date paste to dry ingredients. Mix until well combined.
Line a 9x9-inch pan with parchment. Pour mixture into pan and press down firmly to compact ingredients.
Freeze for 1-2 hours. Slice into rectangles. Store in fridge or on counter in airtight container for up to 5 days.
