
Pumpkin Spice Waffles Recipe
These delicious pumpkin waffles are crisp on the outside, fluffy on the inside and packed with warm fall spices and pumpkin flavor. Top them off with your favorite yogurt, crunchy pecans and pure maple syrup for a perfect fall brunch.

Ingredients
- 1 cup oat flour

1¼ cup Navitas Organics Chickpea Flour
- 1 Tbsp. baking powder
- 1 tsp. cinnamon
- 1 tsp. pumpkin spice
- ¼ tsp. salt
- 3 organic eggs
- ⅔ cup plant-based milk
- ½ cup coconut oil, melted and cooled
- ½ cup pumpkin purée
- 3 Tbsp. pure maple syrup
- Yogurt of choice
- Pure maple syrup
- Pecans

- In a large bowl, combine oat flour, chickpea flour, baking powder, cinnamon, pumpkin spice and salt.
- In a separate bowl, add eggs, milk, melted coconut oil, pumpkin puree, and maple syrup. Whisk until fully combined.
- Pour wet ingredients into flour mixture and stir until combined.
- Let batter sit for about 15 minutes while preheating waffle iron.
- Pour ½ cup of batter onto each heated waffle iron section and close the lid.
- Once the waffles are golden with brown crispy edges, transfer onto a cooling rack.
- Repeat with remaining batter.
- Serve with yogurt, pecans and maple syrup.
