Pumpkin Hemp Granola Recipe

Enjoy this delicious hemp granola in yogurt parfaits, atop your morning oatmeal, or as a quick and easy snack! The best part about this crunchy granola? Homemade granola with hemp seeds not only tastes amazing, but adds the nutritional bonus of plant-based protein, iron, magnesium and omega-3 fatty acids.

INGREDIENTS

2 cups Rolled Oats

1 cup Unsweetened Shredded Coconut

1/2 cup Navitas Organics Hemp Seeds

1/2 cup Pumpkin Seeds

1/4 cup Sesame Seeds

1 tsp Cinnamon

1/2 tsp Salt

1/4 cup Coconut Oil, melted

1 tsp Vanilla Extract

1/2 cup Maple Syrup

DIRECTIONS

Preheat the oven to 300 degrees. Line a baking sheet with parchment paper.

In a large bowl, toss together the oats, coconut, Navitas Organics Hemp Seeds, pumpkin seeds, sesame seeds, cinnamon and salt.

In another bowl, whisk together the melted coconut oil, vanilla and maple syrup. Pour wet ingredients into dry ingredients and mix well.

Place oat mixture on a parchment paper-lined sheet and bake for 30 minutes or until light brown. Rotate halfway through cooking and check periodically. Granola can burn easily.

Remove from the oven, let cool and enjoy!

 Our favorite part about this recipe is its versatility. Feel free to mix in some of your other favorite ingredients like nuts and dried fruit (walnuts and goji berries, anyone?) for even more taste and texture..
