Pumpkin Hemp Granola
Homemade granola with Hemp Seeds for the added bonus of plant-based protein, iron, magnesium and omega-3 fatty acids.
2 cups Rolled Oats
1 cup Unsweetened Shredded Coconut
½ cup Navitas Organics Hemp Seeds
½ cup Pumpkin Seeds
¼ cup Sesame Seeds
1 tsp Cinnamon
½ tsp Salt
¼ cup Coconut Oil, melted
1 tsp Vanilla Extract
½ cup Maple Syrup
Preheat oven to 300 degrees. Line a baking sheet with parchment paper.
In a large bowl, toss together the oats, coconut, Hemp Seeds, Pumpkin Seeds, sesame seeds, cinnamon and salt.
In another bowl, whisk together the melted coconut, vanilla and maple syrup. Pour wet ingredients into dry ingredients and mix well.
Place mixture on parchment paper-lined sheet and bake for 30 minutes or until light brown. Rotate halfway through cooking and check periodically. Granola can burn easily.
Remove from oven, let cool and enjoy!
