Pumpkin Banana Mulberry Bites Recipe

These bite-sized, barely baked treats are the perfect lunchbox add-in or after-dinner sweet. With just the right amount of chewiness and a hint of crunch, they're fall-friendly thanks to the seasonal flavors and spices, but versatile enough for any time of year!

INGREDIENTS

3 ripe bananas

1 tsp. vanilla

½ cup pumpkin purée

½ cup plant-based milk

2 Tbsp. pumpkin spice

½ cup almond flour

¼ cup coconut flour

1 tsp. baking soda

1 tsp. baking powder

Walnuts, to taste

Navitas Organics Mulberries, to taste

Banana slices and cinnamon, for topping

DIRECTIONS

Preheat oven to 350°F.

In a mixing bowl, mash bananas with a fork. Add in pumpkin purée, vanilla and milk.

Gradually mix in flours, baking soda and baking powder.

Fold in the mulberries and walnuts last.

Prepare a 24 mini-cupcake pan with nonstick spray or oil and fill with batter. Bake for 55-60 minutes or until slightly golden on the outside.

Let cool completely before enjoying!
