Protein Pancake Pizza Recipe
An easy-to-make chocolate protein pancake pizza topped with Greek yogurt and fresh berries. The best part—it's grain free, refined sugar free and packed with protein!

DIRECTIONSWarm a skillet over medium heat. In a large mixing bowl, combine ground flaxseed with water and let sit for 5 minutes to form a gel. Into the flax mix, add pumpkin puree, milk, Essential Blend Vanilla & Greens, and cacao powder and blend with a fork until well combined. Spray skillet with cooking spray. Spoon mixture onto skillet and spread with a spatula to form a large thin circle. Heat for 5 minutes or until golden brown underneath, then flip and heat for 3-5 on the other side. While the pancake pizza is cooking, rinse and slice berries for serving. To assemble, transfer the pancake pizza to a large plate or cutting board and top with Greek yogurt, sliced berries, and a sprinkle of cacao nibs. Slice into pieces and serve immediately.
