Peanut Butter Chickpea Brownies Recipe

Rich, fudgy and secretly wholesome, these chocolate brownies are made with creamy peanut butter, nutrient-dense chickpeas and indulgent cacao. Blended to perfection and baked until irresistibly gooey, they’re proof that better-for-you desserts can taste every bit as decadent. 

INGREDIENTS

1 can (15.5 oz) chickpeas, drained + rinsed
½ cup creamy peanut butter
¼ cup Navitas Organics Cacao Powder
½ cup pure maple syrup
2 tsp. vanilla extract
1 tsp. baking powder
½ tsp. baking soda
½ cup Navitas Organics Semi-Sweet Cacao Wafers 

DIRECTIONS

Preheat oven to 350° F. Spray an 8×8-inch baking dish and set aside.
In a blender, add all ingredients except cacao wafers and blend until smooth. 
Add cacao wafers and pulse or mix in by hand. 
Pour brownie batter into baking dish and smooth out. Top with more cacao wafers, if desired.
Bake 17-19 minutes until edges are dry and firm and middle is still slightly underbaked. For a cake-like consistency, bake a few minutes longer. 
When cooled, cut into squares and enjoy!
