Ganache Filling:
Directions
For the Crust: Lightly grease an 11-inch tart pan with a removable bottom.
Melt cacao butter wafers in a small heatproof bowl (30-second intervals, stirring in between). Let cool slightly.
Add all crust ingredients to a food processor and process until a ball of dough forms.
Transfer to tart pan and press to fit crust to the bottom of the tin and up the edges. Place in fridge while preparing filling.
For the Filling: Microwave coconut milk in a heatproof bowl for 2 minutes. Add chocolate and cacao butter wafers and let sit for 5 minutes.
- Mix with a spatula to create a dark and thick ganache. Add in the orange juice and zest and mix to combine.
Remove tart pan from fridge and pour ganache over top of crust. Place back in fridge to set for 3½ hours or overnight.
- When ready to serve, garnish with fresh fruit. Keep refrigerated.
