Maca-roons Recipe

Looking for a quick, sweet treat to snack on throughout the day? Throw together some of these yummy (and customizable) “maca”roons, featuring adaptogen-rich maca powder to help increase your energy, reduce anxiety and enhance mental clarity! Pro tip: chocolate lovers can add some cacao for a boost of chocolatey richness!

INGREDIENTS

1 cup sliced raw almonds (or nut of choice)
2 Tbsp. Navitas Organics Maca Powder
1 tsp. vanilla extract
1 tsp. Navitas Organics Chia Seeds
Dash of sea salt
¼ cup ground flax
½ cup soft pitted dates
2 cups shredded coconut
1½ Tbsp. pure maple syrup, agave or sweetener of choice
2 Tbsp. Navitas Organics Cacao Powder, optional (if making half batch “chocolate lovers”)

DIRECTIONS

Add almonds, dates, flax, vanilla, salt, maca powder and maple syrup to a blender or food processor and pulse until a dough-like consistency is formed.
Add shredded coconut and pulse again until fully mixed.
Test dough to make sure it sticks together. If it doesn’t, add some water and pulse again to reach desired texture.
Using a small scoop, scoop out ball shapes and place on a plate. Flatten slightly, if desired.
If making half mixture chocolate, scoop out all blondie macaroons, then add cacao powder to remaining dough. Pulse until mixed, then scoop out remaining macaroons.
Store in fridge.

Makes 12 macaroons
