Goji Pistachio Brownies Recipe

These rich and chocolatey brownies are just as decadent as they are filled with healthful plant-based nutrients! With just a bit of crunch and the right amount of berry sweetness, they're the perfect afternoon or late-night treats when you need to satisfy your sweet tooth.

INGREDIENTS

2 Flax Eggs (combine 3 Tbsp Ground Flax Seed with 6 Tbsp Water)

1/2 cup Coconut Oil, melted

1/2 cup Water

1/2 cup Granulated Monk Fruit Sweetener

1 tsp Vanilla Extract

1 cup Gluten-Free Baking Flour

3/4 cup Navitas Organics Cacao Powder

1/4 cup Oat Flour

1 tsp Baking Soda

1/2 tsp Sea salt

1/2 cup Navitas Organics Cacao Nibs

1/2 cup Navitas Organics Goji Berries

1/2 cup Pistachios, crushed

DIRECTIONS

Whisk flax eggs, oil, water, sweetener and vanilla until combined.

In a separate bowl, combine flours, cacao powder, baking soda and sea salt.

Combine wet and dry ingredients and mix until a batter is formed.

Stir in cacao nibs, goji berries and pistachios.

Line a 9x9-inch baking pan with parchment paper and lightly oil. Add mixture to pan and bake on 350 F for 22 minutes or until toothpick comes out clean.

Let cool, cut into squares and enjoy!
