
Frozen Cookie Dough Bites Recipe
Such convincing chocolatey flavor with such low sugar per serving (you can also use erythritol instead of coconut sugar to make these fully sugar free)!
INGREDIENTS1/3 cup Cashew Butter 1/3 cup melted Coconut Butter 4 scoops Navitas Organics Cacao & Greens Essential Superfood Blend 1/3 cup Navitas Organics Coconut Palm Sugar ¼ tsp Sea Salt ½ cup Semi-Sweet or Stevia-Sweetened Chocolate Chips |
DIRECTIONSIn a bowl, mix together the cashew butter and coconut butter until smooth. Add the Essential Superfood Blend, Coconut Palm Sugar and sea salt, and stir until a thick paste has formed. Add the chocolate chips and gently fold in. For best results, use a melon-baller to scoop tablespoon-sized balls and place them on a parchment-lined plate. Alternatively, use your hands to shape a tablespoon of dough at a time into balls (dough will be very malleable). Freeze for a minimum of 30 minutes, then transfer to a freezer bag or sealed container for long-term storage. Enjoy directly out of the freezer or thawed for a couple minutes on the countertop for a slightly softer texture. Note: To properly form these bites, be sure to gently melt and stir coconut butter very well in a hot water bath or over very low heat prior to using. You'll want to make sure the mixture is not overly hot because the chocolate chips will melt. Makes 20 Bites
