Creamy Tomato-Miso Soup Recipe
Extra luxe, this creamy soup takes advantage of the mild sweetness of dried goji berries to add balanced flavor to every spoonful.

INGREDIENTS2 Tbsp Olive Oil 1 medium Yellow Onion, diced 1 28-ounce can Crushed Tomatoes 3 Tbsp Navitas Organics Goji Berries ¼ tsp Crushed Red Pepper 2½ cups Water 1/2 cup Cashews 2 Tbsp Yellow Miso Paste |
DIRECTIONSWarm the oil in a heavy-bottomed pot over medium heat. Add the onions and sauté for 5 minutes, to soften. Stir in the tomatoes, dried goji berries, red pepper and water, and bring to a boil. Reduce heat to low and simmer for 30 minutes, uncovered. Remove from heat and transfer soup to a blender. Add the cashews and miso paste, and blend until fully smooth. Soup should have a nice thickness to it, but additional water can be added if needed to thin. Serve warm. Makes 4 Servings
