Creamy Tomato-Miso Soup Recipe

Extra luxe, this creamy soup takes advantage of the mild sweetness of dried goji berries to add balanced flavor to every spoonful.

INGREDIENTS

2 Tbsp. olive oil

1 medium yellow onion, diced

1 28-ounce can crushed tomatoes

3 Tbsp. Navitas Organics Goji Berries

¼ tsp crushed red pepper

2½ cups water

½ cup cashews

2 Tbsp. yellow miso paste

DIRECTIONS

Warm the oil in a heavy-bottomed pot over medium heat. Add the onions and sauté for 5 minutes, to soften. Stir in the tomatoes, dried goji berries, red pepper and water, and bring to a boil.

Reduce heat to low and simmer for 30 minutes, uncovered.

Remove from heat and transfer soup to a blender. Add the cashews and miso paste, and blend until fully smooth. Soup should have a nice thickness to it, but additional water can be added if needed to thin.

Serve warm.
